SUNFLOWER CASSEROLE
Finally! ….. A dish with all things nice: broccoli, corn, cheese and rice.
My kids are in love with this (shhhh…healthy) preparation. Easy to make and simply delicious. Even broccoli haters will love this casserole.
If you are making this for a crowd, you might want to double the recipe. This doesn’t last long in our house!

Directions

1Preheat oven to 350 degrees. Lightly spray a 9x9 inch pan with cooking spray and set aside.

2Heat a pan and add the butter, onions and garlic. Saute till golden brown.

3In a bowl combine the following ingredients: rice, broccoli, corn, egg, cheese, onion, and garlic. Add salt and pepper to taste. Mix well and pour the mixture into the pan. Sprinkle the crushed crackers on top and a drizzle of butter.

4Bake for 20-25 minutes and serve.

Ingredients

2 cups Cooked Rice

1 Frozen Chopped Brocoli/ 1.5 cup steamed fresh broccoli chopped

1 Can Creamed Sweet Corn (14.5 oz)

1 egg, beaten (optional)

1/2 cup Mozzarella Cheese/ Swiss Cheddar Cheese, Grated

1 red onion, finely chopped

4 Cloves of Garlic, finely chopped

1/4 cup Butter, Melted

to taste Salt & Pepper

1/2 cup Crushed Ritz Crackers
