But they ate it. And they liked it! Its almost like spinach dip, but baked.
1Preheat oven to 350F and generously grease a 11x7 inch baking dish.
2In a large bowl combine spinach, rice, butter, cheddar cheese, parmesan cheese, onions, garlic, eggs and milk until well combined.
3Season with salt and pepper to taste.
4Transfer the mixture to the prepared baking dish then sprinkle and then sprinkle with parmesan cheese.
5Bake for 25 mins and then top it with mozzarella cheese the last 5 mins of baking if desired. Serve hot.
