1In a big put heat oil over medium flame. Add onions and leeks and sauté for 5 mins until soft and edges are slightly browned.

2 Add rice, dill, 1 tsp salt and pepper to taste. Stir.

3Stir in the stock and let it come to boil.

4Cover and simmer on low for a 5 minutes.

5Remove lid, add spinach, cover and let it steam for another 5 mins.

6Remove the lid and you should notice that the spinach has wilted slightly.

7Stir spinach into the rice and check the salt. Stir until well combined. Cover with lid and let it simmer for another few minutes until the rice is cooked.

8Remove from heat, taste and adjust seasoning if necessary.

9Plate and garnish with feta cheese and lemon wedges.


1/2 cup Olive Oil

1 Medium Onion, chopped

1 Leek, rinsed and chopped

1 Pound Spinach, rinsed, stems removed, chopped

1 cup Basmati Rice

1/2 cup fresh dill, chopped

2 cups Chicken or Vegetable Stock

To Taste Salt & Black Pepper

4 Lemon Wedges

1/4 cup Feta Cheese
