1Add ghee in a non -stick pot. Add cumin seeds and let it splatter. Now add all the other spices and cashews. Add onions and green chili. Roast for a few minutes till lightly brown. Now add the peas and carrots.

2Drain the water from the rice and add the rice to the pot. Add water and add the lemon juice. Bring it to a boil. Now lower the heat and close the lid. Keep the lid closed and do not stir. Cook on simmer till the rice is done.

3Fluff with a delicate hand and serve hot.

Basmati Rice - washed and soaked for half an hour

2 cups Water

2-3 tbsp Ghee

1 tsp Cumin

2 Cloves

1 Green Cardamom

3 Peppercorns

1 Bay Leaf

1 Cinnamon

2 tbsp Cashew - Chopped

Lemon Juice

1/4 cup Baby Peas

1/4 cup Carrots - diced small

1 Small Onions - finely chopped length-wise

1 Green Chilli - split and de-seeded

Salt - to taste
