EASY CHEESY VEGGIE BREEZY

I like the idea that you can mix up a variety of vegetables you desire in this dish and still enjoy a great healthy meal. So, if you’re looking for a tasty way to use up all those veggies lying around in the fridge, you have to try this simple dish.

Directions

1Bring broth to boil in a pot over the stovetop. Add in the rice. After a few minutes reduce the heat, cover and bring to a simmer for about 15 mins.

2With about 5 mins left, before taking the pot off the heat add the veggies, cheese, salt and pepper, etc. Cover again. Continue to cook at simmer for the remaining time.

3Now turn off the heat and let this sit for 10 mins. After this time use a fork to stir everything together. Serve hot.

Ingredients

1 cup basmati rice, soaked in water for 30 min, drained

2 cups vegetable broth/ chicken broth/ water

1/3 cup shredded yellow squash, squeeze out the excess liquid

1/3 cup shredded zucchini, squeeze out the excess liquid

1/3 cup shredded carrots

½ cup shredded cheddar cheese

salt and pepper to taste

you can spice it up with a pinch of red chili powder, optional
