These fingerlings are a great side dish for any occasion, be it a high tea, lunch or dinner appetizer. They are a delicious treat for the kids to make as well! Try them with a different veggie every time – zucchini, broccoli, carrots, etc.
1To cook the cauliflower florets: steam a little over 2 cups raw cauliflower florets in a little water, covered for 4-5 mins or until tender, but not mushy.
2Drain well and dry on a paper towel. Then using a knife finely chop and set 2 cups aside .
3Preheat the oven to 400F.
4Spray a nonstick cookie sheet with cooking spray.
5In a medium bowl, combine all the ingredients and season with salt and pepper to taste.
6Spoon 1 tbsp of mixture in your hands and roll into small ovals.
7Place on the cookie sheet and bake for 15-18 mins, turning halfway through the cooking time, until golden brown.
8Makes about 30 bambinos
